不清楚,不过发酵的一定是淀粉吗?再说,面筋里一点淀粉也没有?

cheese里有淀粉吗?蛋白质不能发酵?连沼气都会发酵.

二者应该相差很大,面筋是很薄的,烤麸有点象老豆腐.面筋,无锡的最有名,烤麸我在上海吃过.
